Thought you might enjoy a picture of this old Hillbilly coonass in action in the swamp.
I fry the tail in Zatarain seasoned fish fry after soaking in milk and garlic over night in the fridge.

Nice, nice gator. Sounds like you really know your Louisiana cooking! Fried gator is good. I've eaten it b-b-q, gator roast (really good), sauce piquante (not to my liking), jambalaya , etc. It's all in the cook! Enjoy visiting with you! |

HIllybilly coonass......that is funny. My husband is cajun and calls himself a coonass. |

OK?? how did you catch it and how do you kill it?? I'm not trying mind you but I just am curious...I know I could go out and find a place to eat it as we live pretty close to Cajun country can't believe I haven't ever tried it..YET Last edited by txrose on May 4th at 6:31 PM. |

In Louisiana, wild alligator hunting is permitted in September on your own piece of the swamp that you own or lease. You get a tag for each 200 acres. You hang large hooks with a chunk of meat from trees on nylon rope about two feet from the water in the bayou in the evening. During the night, the alligator will jump and grab the hook and swallow it. They can't bite through the rope. You go back in the morning and pull the alligator to the top of the water and shoot it in the top of it's head and pull it into your boat. There are two are three people in each boat. The size of the gators are 8 to 15 feet long. It is a lot of work. You have a great day and happy gardening.Bill Mitchell |

That is something! I lived in Orlando Fl for 8 years and seen alot of gators. But never ate any. What does it tast like? |
