Today we had absolutely beautiful weather to be out and about in the garden. It had been very hot and humid the last couple of days, but we got a break from that today. It wasn't too hot, we had a nice breeze and a lot less humidity. Too bad I had other errands to do, or I would have spent more time in the garden. Our zuchini is coming in faster than we can eat it (but isn't that typical of zuchini????). So far I have made zuchini bread, zuchini pancakes, sauted zuchini, and I plan to make zuchini lasagna and zuchini boats in the next day or two. Any more ideas, anyone? I really look forward to it every year, then we get a glut of it and my family gets tired of eating it. I have yet to find a recipe for canning the stuff, though I have froze some before. Somehow it just doesn't seem the same once you freeze it, though. (i'm not complaining, but my family soon will be!)
I posted some pictures of the colorful carrots we grew last year. Hopefully, we will soon be getting the ones I planted this year. We have green beans coming in now, so I know the canning season has arrived and I will be very busy putting those up very soon here.
