Mint recipes??

I would like to get some mint recipes. This spring I got starts for spearmint, peppermint and chocolate mint. I would like to get some other mints but I figure I had better find some recipes for using some of the mint plants before doing it. |

I have a couple of mint jelly recipes. One of them uses water withe the mint extract and the other uses apple juice with the extract. I prefer the one using apple juice, but I haven't even tried the one using water. The extract is made by boiling the mint leaves in water and then straining the extract out of the leaves. |

Mint Jelly; 2002; 1 cup firmly packed mint leaves 1 cup boiling water 4 cups apple juice 2 tablespoons lemon juice 3 cups sugar Green food coloring (optional) Put mint leaves in a bowl; add boiling water; let stand for 1 hour. Press juice from mint leaves, reserving cup mint extract. Combine apple juice, lemon juice, and reserved mint extract in a large saucepot. Bring to a boil over high heat. Add sugar and bring back to a full rolling boil. Add a package of pectin powder and bring back to a full boil for 1 minute. Remove from heat and skim foam off if necessary. Add green food coloring, if desired. Ladle into hot sterilized jars leaving inch of headspace. Apply sterilized lids to jars and process in a hot water bath for 5 minutes. Because of the slightly brownish tint of the apple juice, the jelly has a slightly olive drab color. The next time I make it, I will use red food coloring rather than green. I tried steaming apples from our trees and the extracted juice tasted like apple flavored water. So I purchased fresh-squeezed apple juice from the market and used that in the jelly. BTW, a half-teaspoon of butter or margarine will minimize any foaming. |

Hi Kitten, Do you like iced tea? I like to add a handful of mint leaves to the water when I make iced tea....Usually do a gallon at a time. Bring your water to a boil on the stove in a small sauce pan. Add the washed mint leaves when you put it on. When it has boiled for 5-10 minutes remove from the heat and discard the mint leaves. Add your sugar (to taste for a gallon) and stir to dissolve. Add 9-12 tea bags (to taste) and let steep to cool... Put in the tea jar and add water. The girls at work love it, too. |

I had heard about the mint tea but I hadnt seen how to do it. I dont drink alot of iced tea, but I might drink more after making it mint Thank you!!!Thank you Randy for the jelly recipe. I am going to try that soon. |

It doersn't have to be iced tea either. Sort of crush a couple of leaves in your fingers and drop into a cup of hot tea. You are welcome for the recipe. I am sure you don't have to use fresh squeezed apple juice for that jelly recipe. The jelly will be clearer if you use regular market type apple juice. When I make it next time, I am going to add a little red food coloring instead of the green. |

If you like martinis take some mint put it in a shaker with some ice and vodka. shake away and pour. It's very refreshing. |
