I have read a few different ways to freeze tomatoes and am wondering what those who have done it find the best.

I would also like to know what the difference would be between freezing them and canning them in regards to their consistency once cooked.

I am also wondering if there is anything i can do with the over abundance of cherry tomatoes, yellow cherry and yellow pear tomatoes i have?

Thanks

Scott

i was told to just wash them and throw them in a freezer bag. when they thaw the skins will come off easily.

We didn't wash our's before freezing. That way they don't stick together. But when we do wash them, the skins come off easily. I've never canned tomatoes so I don't really know which method is best.

I wash and dry then toss in freezer bags. You can always do the same thing with the cherry tomatoes, then thaw them and toss em in a salad, they wont be as firm as fresh picked of course. My granny used to freeze tom's, thaw them out then slice them up for sandwiches after taking the skins off.

Freezing is very much the easiest. I do just as Randy stated! If used for a sauce, soup, chili, etc. it dosen't really matter. Only time I can then is when the freezer is full or needed for other things!
