ok I have a single small eggplant in my garden. So being that i have never eaten this before i need a recipe. Something maybe like an apetizer something i can just do with this one eggplant

how about baba ghanoush? Its an appetiser loaded with garlic with a smokey flavour.
Take your eggplant, pierce it all over....either cut in half lengthwise or leave it whole and grill it till the outer skin turns black. You could do this in the oven too under the broiler. Then remove the eggplant from the grill, cool. Scoop out the meat of the eggplant into a bowl. Mash the eggplant. Add yoghurt ( you can go low fat if you wish or as rich as you wish, even add creme fraiche too), about a cup or so depending on the size of the eggplant. Add about 3 tablespoons of tahini paste, crushed or pureed garlic (to taste), pepper, salt and lemon juice. Add 3 tablespoons of olive oil and blend it all together. You can serve it in a bowl or on a plate with olive oil drizzled over the top, with some toasted pine nuts and parsley sprigs as garnish. You can use toasted pita bread cut in triangles to dip in it, or plain pita or french bread...or cruditees too. Bon Appetite!
