I recently came across a product from a company called 'Bistro blends'. I didn't sample it, but noticed that it was a marinade made with wine and garlic. I questioned about the safety of the product and was told that the garlic was dehydrated when put into the solution. Is there any validity to that statement? I used to make garlic oil with fresh garlic and olive oil and leave it in a bottle for sometimes over a month. I found out here that such a practice can be dangerous... now what about if I use dehydrated garlic(assuming above is correct) AND refridgerate the end product..? |

You cannot compare commercial canning equipment and practices with what you can do in the home, especially in regards to preserving garlic or any other low-acid food in oil. You were very lucky when you did it, but I would not recommend you push your luck any further. Like Russian Roulette it is potentially deadly. Refrigerating is slightly safer, as long as it all stays under 40°F and is never removed (else it warms up). |

OH MY GOSH! I did not know this..mercy. I have been using a mixture of Olive Oil and garlic oil for a while now. What the heck is the danger of it and do I need to be concerned or what? I mean I make the mixture all the time and use it. It sits on my counter in one of those oil pourers (sp). Put it in the refrigerator? |

The danger? A minor thing cause Botulism toxin poisoning that can cause death. You can read a little more about it at http://everything2.com/index.pl?node_id=1542272. I guess it is a lot like a head-on collision in a vehicle and not wanting to wear seat belts. It is a rare event according to those that don't like to wear them, but very final when it does occur....and it does occur.... and it does pay to be safe, just in the chance that its your turn for the luck to run out. |

Canned_Nerd all I can say is, I won't be using that mixture anymore and thank you for the info. I am thankful that I wear seat belts EVERYTIME. |
