Pick it in the spring, when it's small, under 6 inches. I've got it a little taller than that, but don't take any that has stems turning pink. Bring a pot of salted water to boil, add the leaves and boil for 5 minutes. Drain them and do it again with a fresh pot of water. Cook them until tender in the second pot. They will shrink alot, like spinach, so cook alot. Drain and rinse, and then use however you would spinach. Old timers scrambled them with eggs and bacon. I like them in pasta. You have to do the boil twice thing because the leaves contain something that causes bad gastro-upset if you don't boil it out first. There are lots of web sites that have picking tips, pictures and recipes if you google poke salat. I'm glad I tried it, I thought it was good. |
