Looking for Picante/Salsa Recipes..

Looking for some good "fresh from the garden" recipes for mild picante or salsa. Everything I am finding uses some type of pre canned stuff from the store.

Where are you looking? Every place I look calls for fresh ingredients and even if something is canned there is no reason why you can't use fresh, except for canning recipes. You shouldn't modify them.

I have been seeing contents like canned tomato paste, canned rotel tomatoes.

There doesn't seem to be any picante recipes here, but if you put the word "salsa" in the gardenguides search feature it brings up threads with recipes in them right here. Maybe you'll find what you're looking for.

I like recipezaar.com for finding recipes or you might try a Ball Canning Jar site with recipes.

This is a recipe that I use for a fairly mild salsa. Add more or less jalapino peppers to reduce or add hottness. All ingredients are fresh.

8 qts of tomatoes chopped
2 cups chopped jalopeno peppers
1 qt sweet green peppers chopped
1 qt banana pepper chopped
1/2 cup chopped cilantro
6 large onions, chopped
4 cloves garlic minced
1/3rd cup lemon juice
3 cups vinegar
1 tablespoon salt
1 teaspoon black pepper

In a large pot add all ingredients together and bring to a boil stirring often. Reduce heat and simmer for 10 minutes. Ladle into hot jars leaving 1/2 inch head space. Process in hot water bath for 15 minutes. Begin timing when the bath is in a full boiling state. Remove jars from bath and let cool.
