While excellent tasting prior to that, that's when they're as big as they're going to get. You have to kind of keep an eye on them. Because they have a tendency to all come on at once, I usually will pick a few early to eat and when they threaten to go to ruin, I pick, blanch, and freeze the rest. Hope this helps.
