Hot amish lettuce salad

Amish hot spinach salad is the same as hot lettuce salad.This is how we make it.I use a 1 pint jar add to it 1 egg,3 table spoons of flour, vinager to taste, Add water with a little romm to shake the mix ,shake well untill the egg is blended. Before doing this cut up a pound of bacon and fry crisp , drain the bacon and add the pint jar content to the heated bacon in the skillet.,cook untill the the mix is thickened. I used 3 pints total to a pound of bacon. Pour over spinich do not cook the spinach. My wife adds a table spoon of sugar to hers. (yuck) I also cook salt water patoes and server the the hot salad over them. I hope this is clear LOL

LIke I said before Wolf, anything with a pound of bacon has got to be good. I think I will try this. I love boiled potatoes.

This sounds very similar to a Pa. Dutch dandelion salad I've seen. Sounds good to me!

Anything with bacon is good. Glad my cloistral is 100. lol

I found a recipe yesterday that called for this plus unopened dandelion blossoms. I think that would be challenging just to find them! haha The next challenge would be getting my family to eat them. With bacon they'd do it though.

We in Indiana do one that's similar without the egg - fry bacon and take it out of the skillet, leaving the fat in there. Add to the fat a little water, apple cider vinegar, sugar, salt and pepper balanced to your taste for a sweet-sour-bacony liquid. It's thin. Bring it to a boil and pour it over leaf lettuce with thin sliced onion. The lettuce wilts down. It's really good, and I always drink the liquid left in the bottom of the bowl!!

We just call it "wilted lettuce". My mom always used to make it with black seed simpson leaf lettuce from the garden. I just made some a couple nights ago for dinner with lettuce from MY garden!
