Cutting back peonies

I moved into a house that has a huge row of great peonies already planted ~ but I know nothing about them.
Once Peonies bloom, when is the right time to cut back the stems?
Do you have to tie them back and wait for the stems to turn brown, or can you just mow them down?

DON'T mow them down.. Wait until fall, then cut them back.
