I've been collecting poke greens lately. Pretty tasty. Anyone have any particular recipes to make with them? Apparently everybody traditionally scrambles them with bacon and eggs. I cooked some up in butter (after boiling twice) and topped them with a poached egg and cheese, and that was good, and I substituted them for broccoli in an Italian sausage pasta recipe and that was good too. |

Hi aimee, boy, I haven't heard of anyone eating poke in years. Actually we lived in southern Missouri in 1979 & 1980. We rented a house in the country and the neighbors came and introduced themselves and asked if we were going to use the poke growing out back. Ok, being from northern Ohio, the only thing I knew of poke was the song Poke Salad Annie. Well they should us what it was, it was all over by the back fence, and showed me how to cook it. It wasn't that bad, but I guess I couldn't get over the fact that I had to boil it twice and rinse it, then added bacon to it for flavor. They told me you boil it twice because other wise it is poisonous to eat. Plus it took a half of a brown grocery bag, (didn't have plastic ones back then), to get a pan full after it was cooked. But at least I can say I tried it. We also lived in southern Indiana, Huntingburg, Ferdinand & Richland from 08/1977 to 01/1979 then we moved back to Indian when we left Missouri. To Newburg (east of Evansville) till we moved back to Ohio in 1983. What part of Indiana are you in? |

Omygod. I grew up in Huntingburg, born 1971 left for college 1991. Go Raiders! After living numerous other places around the country, I've settled at least temporarily in Evansville to be closer to family. I always went hunting, fishing, and gathering with my dad over in pike county, around Stendal and Spurgeon, and the interest in wild foods has never left me. This spring we found some morel mushrooms in Ferdinand State Forest. The poke is too big now, but blackberry season's coming up! |

what is poke greens do u have a pic my grandma used to cook them when i was young but that was about 45 yrs ago |

Too late in the year now... now they're enormous bushes with purple berries. You eat them in the spring when they first come up. |
