Peanut Butter Easter Eggs ( rbsteen9)1/2 cup butter, softened 2 1/3 cups confectioners sugar 1 cup graham cracker crumbs 1/2 cup creamy peanut butter 1/2 tsp vanilla 1 1/2 cups dark chocolate chips 2 tbsp shortening Pastel Sprinkles In a large bowl, cream the butter. Gradually add the confectioners' sugar, graham cracker crumbs, peanut butter, and vanilla. Shape into 16 eggs.. Place on waxed paper-lined baking sheets. Refrigerate for 30 minutes or until firm. In a microwave, melt the chocolate chips and the shortening. Stir until smooth. Dip the eggs into the chocolate. Allow the excess to drip off. Decorate with the sprinkles. Return the eggs to the waxed paper. Chill until set. Store in an airtight container in the refrigerator. Makes 16 eggs |

Sounds like a great recipe! The peanut butter cookies as well. My fiance made some PB cookies from a recipe she had... they were amazing! |
