BEEF!!

So in the indian food thread we started talking about what we like to do with brisket, so I thought I'd start a beef thread. It being cold and all, what's your favorite big warm beefy thing to make? Here's one of my very own recipes that I like to make in the crockpot in winter.


Beef Shank with Olives

1. Brown 2# floured shank meat with bone in olive oil. Put in crock pot. Shank is the "Soup bone" cut with the round marrow bone in the middle.

2. In the skillet add more oil if necessary and sautee 1 large diced onion, 1t red pepper flake, generous cracked black pepper and 3 cloves minced garlic until golden.

3. Add 1T anchovy paste, lots of fresh oregano sprigs, 2 cans diced tomatoes, 1/2 cup heavy red wine, and 1/2 cup each rough chopped green and kalamata olives. Bring to boil, scraping pan. Add to crockpot.

4. Cook on high 4 – 5 hours or until meat is very soft. Remove oregano branches. Adjust seasoning if necessary.
Break up meat but leave the marrow bones in there.

I like to serve it with soft polenta. It goes well with roasted potatoes too, or if you thin it with a little more tomato you can even use it with a short chunky pasta like rigatoni. Top it with fresh chopped parsley and tons of fresh grated pecorino cheese.

All that to someone with no stove...Aimee, that's cruel! I guess I could go to Jax and try it out there. Sounds great!

Well, you could brown and sautee everything in a skillet on your camp stove, and finish the rest in a casserole in the toaster oven......

Doncha have a crock pot out there?

They're multiplying like rabbits around here. I was rummaging in the attic and found another one in stuff my husband brought from his house years ago.

My favorite beefy things are beef stew or filet mignon. Buying the filet at the meatmarket is pretty cheap and hubby broils them in the oven or does them on the grill, weather permitting. Oh heck, I like his stroganoff and my grandma's recipe for beef vegie soup, too.
