canning jalapeno

Hi I am tring to can for the first time and I am trying to figure out if I can can jalapeno with out useing a brine?

Of course. Brining is actually an older method of preserving before refrigeration and canning, though a lot of people still love to do pickles and vegetables that way for the unique flavor.

"Pickled" recipes for jalapenos are easy and require only a Boiling Water Canner. Without pickling them, because they are a low-acid food, requires the use of a Pressure Canner and sticking to a proven recipe to avoid Botulism poisoning.

You can also do a lot of recipes that just require refrigeration or freezing and no canning at all.
