New to Canning

Where do I start? Do I buy a kit? I would like to make dill pickles, hot sauce, and can or freeze my purple hull peas. I have no clue where to begin. HELP! |

The first step is to buy the Ball Blue Book of Preserving. $5.00 at the Ball Canning website or can be found locally as many places selling canning supplies. Learn the difference between high-acid foods and low-acid foods and why they require different methods of canning (Boiling Water Canner and the Pressure Canner). You can also find much of the information as the following website: http://www.uga.edu/nchfp/index.html Dill pickles can be done in a Boiling Water Canner. Your peas would require a pressure canner and probably the hot sauce too. You might find that just making stuff for the refrigerator/freezer might be more satisfying and easier. |

I personally rather freeze my peas, they don't turn out mushy that way. Just my preferance. Heres how I do it: Pick out any that have blemishes (sting holes, discolored, etc) wash under clear tap water. Just do cover with water and let come to a boil for 3 min. Pour into a large container to cool. You can add ice to speed up the cooling if you like. Once cool bag into freezer safe freezer bags. I only bag enough in each bag I think my family will eat at one meal. That way there isn't as much waste. DH doesn't like left overs. Do get the Ball Blue Book, you'll be glad u did. I agree whole heartedly. People get caught up in the canning craze as if it is the ultimate storage method....and totally forget what canned peas look and taste like and then compare to frozen peas. There are some things in life that should NEVER be canned if it can be avoided.
