Taking the compost plunge

Hi everyone,
Well, I did it. I ordered a composting bin!! I can't wait to get started with it.
I have one question (actually a million but I'll start with just one). When do you stop adding ingredients? What I'm wondering is, when the compost looks like it's getting close to spreading do you just stop adding to it so you don't have chunks of food waste in the garden and then just start a new pile after emptying the bin?? Am I as clear as mud??

That's a great question!
Here's what I do:
I put a screen made of quarter inch hardware cloth over my garden cart (it's in a wood frame that fits perfect)
I put some of my compost on it, and spread it so the finished stuff falls through, while the pieces that are too big stay on top. Put those big pieces aside to put back into the bin!
I have 2 piles next to each other, so I put the stuff that's not done yet into the other pile. I just keep switching it back and forth like that whenever I need to use my compost
I also do that when I am turning my piles (I don't have a tumbler)
