I love fresh spinach and it's so easy to grow so I always try to keep some growning. This year I came up with a really simple spinach pesto recipe.
Fill a food processor with spinach, onion to taste and olive oil. Mix well. Transfer to a container, adding more olive oil if need. Add any fresh or dried herbs you like.
Serve with just about anything, bread, eggs, fish and pasta just to name a few.

we cook spinach and then put slices of hard boiled eggs on top, then drench it in melted butter.
probably not the slightest bit healthy by that point but ooh it's good. even frozen spinach is good that way.
