zuccini and summer squash

My Summer Squash and Zuccini are producing like crazy. I like both but my husband isn't so fond of them. So I'm looking for new recipies, and suggestions on how to store/preserve them.

Unfortunately I don't have any canning equipment yet. I do have a food dehydrator (which I don't have the directions for and haven't used yet). And I do have 2 freezers.

My zucchini is producing as well and the only thing I make is Zucchini bread. It is a MUST have around here! I already have people in my family telling me they want it! Now I just have to find my recipe. If you need a good bread recipe let me know and when I find it I can post it for you.

I didn't know if you could freeze or can zucchini?! Can you?

Yes! You can freeze zucchini. Shred it and put the amount you use to make your bread or a casserole or whatever in a freezer bag. Squish the air out of it, then freeze. Works for both zucchini and summer squash. My mom has made all kinds of things with zucchini. Let me know if you would like some recipes. Be glad to pass them on to you.

Parmesan Zucchini Sticks:
2 small zucchini (about 6 inches long)
3/4 cup shredded parmesan cheese
1/4 cup bread crumbs
2 eggs, beaten
vegetable oil
1.) Cut zucchini into 3x1/4x1/4-inch sticks.
2.) In blender, combine cheese and bread crumbs; process until well blended.
3.) Dip zucchini sticks into beaten egg, then cheese-crumb mixture.
4.) In medium skillet, heat 1/2-inch oil; add zucchini and cook over medium heat until golden brown, about 2 minutes.

This is really yummy and is a real treat.

Zucchini Crust Pizza
3 cups shredded zucchini
enough egg to fill 3/4 cup
1/3 cup all-purpose flour
1/2 tsp salt
1/2 cup chopped onion
1/2 cup julienned green pepper
1 tsp. dried oregano
1/2 tsp. dried basil
2 cups (8 oz.) shredded mozzarella cheese
2 small tomatoes, halved and thinly sliced
1.) In a bowl, combine zucchini and eggs, mix well. Add flour and salt; stir well. Spread onto the bottom of a 12-inch pizza pan coated with nonstick cooking spray. Bake at 450 degrees for 8 minutes.
2.) Reduce heat to 350 degrees. Sprinkle with mozzarella cheese, tomatoes, onion, green peppers, oregano and basil. Bake for 15 to 20 minutes or until onion is tender and cheese is melted.

I have never eaten raw zucchini! I guess I'm going to try it this year! But my bread comes first. The bad news is the recipe book with my recipe in it has vanished.

Zucchini Bread
3 eggs
3 cups sifted flour
2 cups sugar
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1/4 tsp. baking powder
1 cup oil (or less, if desired)
2 cups grated or shredded zucchini
1 cup chopped nuts, if desired
Beat eggs until foamy, then add all other ingredients. Pour into greased and floured loaf pans. Bake at 350 degrees for one hour.

Hope this recipe helps you out. I have another recipe that includes pineapple and raisins, if you are interested.

cool recipes!

Last night I dehydrated zuccini and summer squash. we didn't care for the dehydrated zuccini but the summer squash was pretty good. my husband ate a tray of dehydrated squash very quickly.

So I'm thinking that yes, I plan to cook alot of these veggies while they're fresh, but for the amount that is more than we can eat now, I"m going to freeze 2 cup bags of shredded zuccini and dehydrate slices of summer squash. that way both will store for when the garden stops producing. And i'll have squash snacks and zuccini ready for breadmaking.

I was watching a show the other night about people who eat only raw food. One of the favorite recipes is to slice zuccini into thin strips and use them as 'noodles' for their raw pesto and tomato sauce, as in spaghetti.

Countrylane, I might have to try those Parmesan Zucchini Sticks. They sound pretty good.
