Hello All! We are going to can for the first time this year. We have 3 Heartland tomato plants, 1 Mortgage Lifter and 7 cherry tomato plants that are going crazy. My mom says she doesn't think the cherry tomatoes will can very well (we were hoping for salsa or marinara sauce). Has anyone ever canned with cherry tomatoes before? Are there rules in canning about using certain types of tomatoes? I have always broken the rules in cooking with mostly success but wanted to check with this one first since the materials are a little spendy. Thanks!! |

Some recipes don't even require them to be skinned first. Yes there are "rules" in canning, not just tomatoes, and you will be wise to read and follow them to the letter. It may keep you and your family from getting sick. A good source is the Ball Blue Book of Preserving (under $10) and is considered "priceless" when it comes to food safety. |

I've always just mixed them in with other mators. I have a lot of yellow pear on my counter now an will mix them in with the Mortgage Lifters or whatever is ready at the time of canning day. |
