Green Tomato Bread, Anyone?

Here's a recipe I got from a gal who works at one of our accounts, it's great because you can dice and freeze the green tomatoes in the fall and have it all winter long:

Green Tomato Bread

3 eggs beaten
2 1/3 c sugar
1 c oil
2 c chopped green tomatoes
1 tsp vanilla

Mix above together.

3 c flour
1 tsp salt
1 tsp baking powder
3 tsp cinnamon

Sift above together, then pour wet into dry and combine well.

Add

1 c walnuts or pecans

Mix together.

Bake at 350 for 1 hour, test before time is up.

Makes 2 large (5x9x3) loaves.

The diced green tomatoes wind up tasting and acting much like raisins, it's basically a quick spice bread otherwise. Really tasty way to use up all those maters that just won't ripen, or as has been pointed out here, start early and harvest some greenies before they ripen! Yummy....
