Cold Pickeling w/ Foodsaver

I am thinking of trying to do some pickled cukes in the foodsaver. I plan on slicing cukes, adding brine to bag, vacuum seal, and then store in my extra fridge. I know the foodsaver is not the same as canning - where it can be stored unrefrigerated. But my gut says it should be fine with all the salt and vinegar in an airtight environment, refrigerated.

I'm going to do some the traditional way in jars with a pressure cooker, but thought I could try something new. Anyone done this??

Your gut might want to update its information on making pickles.

No I haven't tried either of those methods, though you have given me some nice images to think about. I hope you will tell us your gut reactions when you try them.
