Okra recipe?

I purchased some okra at a bodega on Saturday and need a good recipe. The only time I have had them is fried and that is out of the question so does anyone have a good healthy recipe using okra?

We ONLY eat our okra fried usually but you can cut it up and add it to gumbo or veggie soup if you want. Sorry, not much help here....

I usually fry okra or eat my sister's okra/tomatoes/rice. Check out allrecipes.com website. I've used this site for several years and have picked up some fanstatic recipes there.

Hi my friend fries hers also, she uses combination flour,cornmeal mixture, dip in egg first then combination flour. fry in canola oil. that receipe at allreceipes is a good one also. also try cooks.com

Here is one my husband fixed over the weekend. It was pretty good.

2 pounds of frozen sliced okra (could be fresh)
2 cans of rotel tomatoes-drained
half an onion-chopped
half a chopped bell pepper
salt and pepper to taste

combine all and cover with bacon. bake @350 for about 1.5 hours or until okra is tender. bake uncovered.

I have a very similiar recipe, using sausage, instead of bacon. I cook the okra and onion and all on the stove. Love it over rice.

you can try boiling it, and dip it in vinegar and salt and pepper(as ur sauce)

I don't really like okra but my husband does. Fairygarden, your recipe sounds like one he would like. This is a recipe I clipped from Southern Living magazine a few years ago for Okra Creole.

3 bacon slices
16 oz frozen okra (I'm sure fresh would be better)
1 can chopped tomatoes
1 cup frozen onion seasoning blend
1 cup frozen corn kernels
1/2 cup water
1 tsp creole seasoning
1/4 tsp pepper
hot cooked rice

Cook the bacon until crisp. Remove bacon and drain on paper towel. Cook okra and next 6 ingredients over medium heat for 5 minutes. Reduce heat to low, cover and simmer for 15 minutes. Top with crumbled bacon and serve with rice.

I think a bodega is just a neighborhood store.

My Aunt makes it just with cut up fresh Okra and chopped onions cooked with a little oil tossing in a little cornmeal it cooks up in a cast iron skillet and is a little blackened also season with pepper and salt.
