Roasted sweet potatoes & vidalia onions

This is so easy and so good. I make extra to snack on (I just heat it up in the microwave)


2 sweet potatoes, peeled and cut into bite size pieces
1 Vidalia onion, sliced
Seasoned Salt
EVOO

Preheat oven to 425

Place veggies in bowl and sprinkle with olive oil and seasoned salt. Combine until well coated.

Place on baking sheet in single layer and roast for 40-45 minutes.

I think I made that one time.....seems like I found it in a Southern Living Mag.

Vidalia onions are great arn't they?? I work for a wholesale produce company and we are into selling the vidalia onions right now, we have growers in Georgia that grow for us so we can sell for them. My hubby and I don't really like any onions, but my work gives all the office workers each a case of onions to give away to our friends and family.
