I love to cook homemade goodies. The only recipe that I don't have is a good caramel cake recipe. The girls at work use to bring in a caramel cake from Star Market that was out of this world! If anyone has one they will share I would appreciate it.

Ingredients for cake
1 box of duncan hines yellow cake mix
1 and 1/4 cups of milk
4 eggs
1 stick of butter or margarine
1 tbsp vanilla flavoring

Icing:
2 sticks of real butter
1 lb light brown sugar
6 oz of carnation milk
pinch of salt

Mix milk, eggs, butter or margarine and 1 tablespoon vanilla with cake mix, beating til smooth. spoon into cake pans and bake at 375 until done. Make about 8-10 thin layers.
Then mix butter, brown sugar, carnation milk and pinch of salt in a pot and bring to a rolling boil, stirring constantly. Cook at rolling boil for 2 minutes-time by clock- and remove from heat. Beat with electric mixer until glossy. Spread on layers.

This is time consuming because of all the thin layers, but I think it is worth it. We have this for holidays and special occassions.
Enjoy.

Oh, wow! It sure does! Is there any reason why you couldn't just make it a sheet cake, though? I don't have time for all the layers. For a long time I've been looking for a caramel cake recipe that you didn't have to brown the sugar in an iron skillet!! Start with brown sugar!! Duh!!!! LOL

Fairygarden, do you use salted or unsalted butter?
