Building a huge Butterfly and Hummingbird Garden...

Hello All, I just need help with one issue...that with all the gardening books I have, they make no mention of how to arrange plants with space in a garden to be able to weed and harvest seeds (when the time comes)...only how far to space each plant from one another for growth. How does one plan for this? make 'walkways'? For example, I've germinated and sown 150 Salvias...Coral Nymph, Lady in Red, Subrotunda and Dreamsicle...if I planned on having rows of them...and space them the 1 ft apart for each...and once the reach full growth by mid-late summer...how in the world do I get the seeds from the 4th row without stepping on all the plants... Yes, I'm a newbie to this...my 1st time sowing and gardening other than picking up plants at a nursery. I never took on a major project like this before. My garden plan on graph paper looked great with my planning for spacing and all...but I left out this very important part... ...I'm just glad I realized it before I planted and not after! Any advise would be grately appreciated!!!
