Oh, wow..you should ask, haha, planning on some tonight! NONE of my family will eat it right out, so I came up with something (accidental from years ago). What happened years ago was I had a pal who got a DEAL on a lot of some extra firm tofu, and gave me a lot of it. no way I could use it fast enough so...I decided to FREEZE it. I drained it pretty well and sliced it about an inch thick and put it in freezer bags. When I defrosted it...it was kinda spongy so I SQUEEZED the liquid out, then noticed the texture was quite different. I rubbed it between my hands and it crumbled WONDERFULLY. So, what I do is I mix half and half with ground beef, mix well, and use it for tacos, meatloaf, meatballs. THEY don't know..except when I mention it! I have more, but have to go make tacos...half tofu ones! This has been both great on the budget (stretch the ground beef twice as long) and our health

Hey, thats a good idea! I'm all for being sneaky to get them to eat healthier . I picked up two pkgs today. One of the firm kind and one of the silken kind. I think I will try to make a fruit smoothie with the silken one.

I lost a lot of weight 20 years ago, on a diet that was pretty close to a diabetic's diet. Tofu was one of the recommended protein sources. Now, I'm not to crazy about having too much soy these days, but this was the way I used to eat it:

Using Mori-Nu Silken tofu, I whipped it up in the food processor with frozen berries and then added some presweetened lemon drink mix to give it tang and sweetness. The I ended up with an almost-frozen concoction that was really delicious.

It has to be the silken tofu, though. The others are kind of grainy and not very nice in this recipe.

We tried a berry smoothie with silken tofu this morning. Wasn't my favorite, but I bet the lemonade mix would do the trick.

I found a recipe for tofu Lasagna. Sounded good. It recommends that you assemble the dish, then let rest in the fridge overnight to allow the tofu to absorb the flavors of the tomato sauce. I might also add a layer of eggplant or zucchini as well.

I'd love recipes on tofu (I'm borderline vegetarian). We eat it all the time when we're out, but I haven't prepared it before. I bought some on a whim, but I haven't had any luck on finding recipes - most called for frying it.

I don't think I could do the smoothie thing though

Sorry, although an avid cook, I can't help you with this one. I don't do tofu ever since I saw a special on The Travel Chanel on "stinky tofu" and how they make it in Taiwan. Good luck!

LOL, I watched a special a few months ago about the history of butchers (or something to that nature), and now I've added sausage/hotdogs to my "do not eat" list.

Know what you mean. The tofu on that show looked so rotten, I could actually "smell" it myself! Lost my appetite watchin that show!
