Deer Meat Ideas

My husband and one of his drivers exchanged 2 deer shoulders for 2 pies. We used one shoulder to make some grilled skewers for Christmas. He soaked the cut up meat in whole milk for about 4 hrs. then drained and refilled with fresh milk and soaked overnight. He seasoned and skewered pieces of meat alternating with veggies. I was a little hesitant to try one but it turned out to be delicious. Now that I know it can be delicious and not gristly I am wondering what other people like to make with deer meat. Whats your favorite deer dish? |

Hey AG! My husband does not hunt so I don't have any favorites to share. Have you checked on the "Wild and Exotic" foods forum on RecipeZaar? There is a lot of give-n-take of venison info on there. Just thought I would chime in since no one has posted a reply

Well, I browsed around on a couple of my favorite recipe sites. Most of the recipes that I read seemed like they treated the deer meat just about the same as beef. I think that I will soak it in milk though before we use it in a recipe. |

I'm not sure if it makes it more tender. I do know that when we soaked it last time it drew alot of blood out of the meat. People have told me that it takes the 'gamey' taste out of the meat. I don't have enough experience with it to know how true that is. |

I've cooked a lot of deer and moose meat-----have never soaked it in milk before. I cook it just like any other meat----only I tend to "season" it well--just in case there's any "gamey" taste to it. In fact I prefer deer or moose roast over beef--not much fat--if any. Had some canned moose meat last year----fantastic!!!!!!!! |

Thanks sweetle. I think we will thaw out the remaining shoulder and cut it up this weekend. Looking forward to having some more for a weekend dinner. |

i too cook a lot of deer meat and it is great. i like it better than beef. you are right most people just use it like they do beef. i have never soaked mine in milk, some people do to keep the gamey taste out. i dont have a problem with the gamey taste. the only thing would be if you got a rank deer then i wouldnt even try to use it. but thats just me. |
