This is my second year on growing celery and this year it grow like crazy. I way to much to use right away and I was wondering if I could freeze it for later use in sauces. Any suggestions would be appreciated. Thank you. Tina |

I've bought frozen veggie mixes with celery in it and it was fine. You may only be able to use it in cooked things as it's probably not crispy after it thaws. |

I've frozen celery that was cooked in stew. it came out fine although a little mushy. i think i'd recommend freezing it with some liquid over it though. |

Bought frozen celery is probably flash frozen or something fancy like that. I've always wanted to learn how to keep celery myself. I wonder if you cook it and freeze it? That would work for something like chicken stew, but raw? I don't know. |

I find it easier to dehydrate my excess celery, including the leaves left over from chopping. They then last forever and I just toss into my stews and other recipes where they rehydrate during the normal cooking. I also take some of it and ground down to a powder for my spice rack. |

Hey, that's a great idea. The leaves would work great. I suppose you'd have to chop the stalks finely because celery isn't much except water. |

I put my celery into the dehydrator in 1" or so chunks. Like you said it is mostly water so it shrinks to almost nothing. |
