Green Beans with Tomatoes (Pictsweet recipe) You could adapt this recipe for your fresh green beans and tomatoes from the garden. It would probably taste even better! I've had kids that don't eat green beans eat this because it tastes like pizza to them. 1pkg. (14 ounces) Pictsweet (baby) Whole Green Beans 1/4 cup olive oil 3 tomatoes, chopped 1 clove garlic, minced 1 tsp. basil 1tsp. oregano 1Tbsp. parsley salt and pepper 2 Tbsp. Parmesan cheese, grated Place frozen green beans in container and cover with water. Place on stove top and bring to a boil. Boil for 3 minutes. Drain, well. Heat oil in a skillet; add beans and toss to coat. Add tomatoes, garlic, basil, oregano and parsley. Cook mixture 5-10 minutes or until thoroughly heated. Salt and peper to taste. Top with cheese. *What I do: I use 2 heaping cups of halved cherry or grape tomatoes and I put them in the skillet first so they can soften up a bit before adding the green beans, usually while the green beans are draining. I add the spices with the tomatoes, including the sea salt and fresh cracked pepper, then I add the green beans. Make sure the green beans are well drained and if you are using fresh beans just boil a little longer. Also, use your favorite Parmesan cheese. **For the meal: I serve with Italian seasoned grilled chicken breast,(indoor grill) with pizza sauce for the kids, bread sticks and a salad. For a lighter meal we leave off the sauce and breadsticks and oven roast new potatoes with carrots in olive oil. |

We really like it. It taste fresh, but not to oily and heavy. I had to pick my jaw up off the floor when I saw the little ones liked it to. My MIL brings us grape tomatoes in a gallon ice cream bucket, so this recipe is a big help!
