Does anyone have a recipe for this? My grandmother said that slippery Jims are excellent but does not have the recipe anymore. thanks

What is the "jim" part? Fruit, vegetable, animal, mineral? I have a friend who cans anything that isn't moving and I would be surprised if she wouldn't have a recipe. Nothing on RecipeZaar and a google search turns up nada. |

I haven't heard of slippery jims, but pickled watermelon rind is sometimes called slippery jake. Could that be the recipe you need? I have one for watermelon rind pickles if you'd like it.

My mother made slippery jims many years ago from watermelon rind. The difference between jim and jake could be just the area. I would like to take a look at your recipe if you are willing to share it. Thank you very much--roger beneker |

I found this recipe on a search, which may be what you are looking for, but please know that this is an old recipe and does not meet modern canning (pasteurizing) requirements for safety. If you make it, store in the refrigerator. Slippery Jacks (Pickles) from Grit magazine * 8 large, very ripe cucumbers * 1/2 cup salt * 1 1/2 cups sugar * 2 T. mustard seed * 1 T. celery seed * 1 T. Mixed whole spices * 3 1/2 cups cider vinegar * Pare and slice cucumbers lengthwise into 4 or 5 inch lengths. Remove seeds. * Sprinkle with salt and let stand 24 hours. * Place salted cucumbers in colander, drain one hour. * In large cooking pot boil sugar, spices and vinegar 5 minutes. * Add cukes and simmer 20-25 minutes. * Pack into hot jars and seal at once. |

I also have a recipe for watermelon pickles but they are very sweet--the jims I remember were on the sour side. I would be very much like to you recipe-thanks |
