Hi Neighbor I'm Zone 6B I still have lots of tomatos...some are still turning red..but others.many others I know will not get a chance to turn....I'm gonna can my greenies.......into a pickle....riper ones make great fried green tomatos ...but the brown bag thing to encourage ripeness..I haven't a clue...but I can gaurantee that somebody here will have the answer...check the canning and pickling area...there are a lot of people over there that can help too. |

Of course ripe maters are better, but at times you dont have that oppurtunity. I always leave most of my greens on the vines until I pull them. Then I put the large maters into brown bags,or just a cardboard box. Then place them in a dark section of my cellar, they will eventually turn red. The smaller ones, I pickle or make a relish.I do have recipes for both, but they can be hard to translate. Also, yes fried green maters are delicious. Kenny

I slice mine and salt them and place them in a collander for 30 minutes or so, this will remove a lot of the water from the tomatos. Then I dip them in buttermilk, and dredge in floor, and fry them in a skillet. |

We just took off about 10 lbs of green tomatoes off the plants yesterday. It's getting into the 30's at night. I've always done the paper bag trick and it does work..most of the time. |

Putting green tomatoes in a paper bag with a couple of apples works better from what my dad told me last week. I have lots of green tomatoes to and I did put the bigger ones in a paper bag with apples and they are starting to turn red, but the ones I left in the buckets are also turning red, so who knows which is the better way.
