This is for 2 people but can be doubled.
1 Bag Carolina Yellow Saffron Rice
1 small green bell pepper, diced
1 small sweet onion, diced
1 cup diced tomatoes
1 zucchini, sliced and quartered
Prepare rice as directed using vegetable stock instead of water (I use Imagine Brand Vegetable cooking stock)
Meanwhile, saute peppers, onions and zucchini. Toss in diced tomatoes when other veggies are almost done.
When rice is done, turn veggies in carefully so you dont smush anything. Serve and enjoy!
