Brassi says it is because of humidity in the air. I tend to agree with that.

Laurie, you can NOT make divinity when it's humid. AND you have to bring your egg whites up to room temp before you start. AND it requires beating the mixture the entire time it cools which is where most people fail. Actually you have to beat it long after you think it's not going to come up. Now we mix chopped nuts in rather than sticking them on top.

You can do it but it's a hard one. And my recipe is a little different.

I add chopped nuts to mine also AC. Then I put the pecan half on top also~prefer it that way. That is how grandma did it too.

I made Prettyladys Peanut butter fudge,,,,,,,,,SO yummy. Today I made another batch but I put chopped honey roasted peanuts on top!! Hubs loved it--he had some for breakfast--before it had totally cooled. He has such a sweet tooth!

I just had to tell ya what i made today. I used Racheal Ray's 5 minute fudge. WOW, ya gotta add this one to your regulars. I made it even faster in the Microwave(I KNOW,,,,,,,,,so not Martha)

Racheal Ray's 5 minute fudge(always give credit where due)
1 (12 -ounce) bag semi- sweet chocolate chips
9 ounces(3/4 th of a 12 -ounce bag) butterscotch morsels
1(14 ounce) can sweetened condensed milk
1 teaspoon vanilla
1(8ounce) can walnut halves(I had to remove daughter has allergy)
1/2 cup currents

Place chips, milk and stir till chips..... melt slowly. (First i made in a sauce pan, second I made in glass bowl in microwave). Mix well till all combined, remove from heat and add vanilla. Pour fudge into a greased/buttered pan(this is where i added toppings) and cool. Let cool for 4 hours and cut.

I Made the first fudge the way it was to be made by the instructions. The second batch I added chopped honey roasted peanuts, the third batch I crushed up 2 candy canes and add it. I must say........I've had a nasty cold for the last 3 days,, I don't feel like eating---except for **FUDGEEEEEEEEEEEEEEEEEEEEE!!!!***
You guys gotta try this one--I know it's late for the season. But this is so easy and good!

Does anyone have a fool-proof recipe for old-fashioned cocoa fudge? Not with marshmallows and condensed milk, but with butter, sugar, and Hershey's cocoa. Whenever we got a craving for fudge, I'd promise to do the beating with the wooden spoon if my mom would make it. She also made it every Xmas, but I tried it on my own once and ended up with something close to petrified Tootsie Rolls!

butter the size of a walnut, nuts opt.

Boil until the soft ball stage. Remove from heat and and add vanilla, butter and nuts.

VERY GOOD! We had it every year as I was growing up.

There is one more recipee fer Fudge out there. It's the Original one off the Hersheys Chocolate can. No cornstarch or karo syrup and ye really have to beat it, but that's my original. We finally found it last year but I fergot to write it down. :o :o
