Mom made this every year: potato candy

boil a very small peeled potato, mash well and add powdered sugar til it is stiff and will form a stiff dough you can roll out to 1/8 " thin. spread on peanut butter thinly and rol up into a log. slice into pieces. Keeps for days and is really good. easy for kids to help make.
