Freezing Carrots

I know that there has to be someone that has done that. I don't want mushy carrots in the middle of winter when I want some on a salad.

I would say it would be just fine to freeze them with our blanching them first...a few years back I may have said blanch first...But AQ has done all her veggies without blanching for a long while......so I have tried over the past year and find they do freeze far better with out the blanching and when thawed are not mushy ...Hope that helps..

Can I freeze carrots without blanching? I want to dig them up, clean them, cut off the tops and vaccum pack them whole. Will that work. I have ground them up and froze them and used them in carrot cakes and bars and they came out fine. Just wondering about leaving them whole.

I have done it both ways and have had good luck either way

I froze them last week and was going to thaw some out for Thanksgiving.

HA my ears were burning... I never blanch. They all thought I was nuts at first but I have converted those that try it. I did it out of ignorance but it's certainly the thing I do and like.

But ummm I never thawed them and put them on a salad. Hope that works for you. I am unable to be on much these days but if it does please PM me.

this year I just wash them and tossed them in the freezer...I love EASY
